So, you want to get on the Vegan train, but not everyone you feed is on board… you can still provide quick/ healthy (vegan) meals that will get eaten.

What has worked for me is to make things that didn’t seem “weird” things they can identify such as:

 

  1. Stir fry with less meat & more veggies
  2. Tacos with alternative ground beef, add a can of rinsed (kidney, black or pinto) beans + corn or shredded carrot to the taco meat while cooking so carrot softens and blends into the meat
  3. Veggie cheese burgers with (frozen) onion rings
  4. Alternative meatballs/ ground beef with pasta & sauce + veggies or salad
